Bring the Heat
Why It Tastes This Good

One Week. Every Batch. No Exceptions.

The moment we pack up the farmers market each Saturday, we start on next week’s batch. Seven days later, it’s ready. That’s the whole secret — time, smoke and good beef.

  1. 1

    Marinate

Beef soaks up our house marinade of hot sauce, soy and blended spices.

  2. 2

    Smoke

Low and slow — real smoke, real patience, no liquid shortcuts.

  3. 3

    Dry

Dried meticulously until every piece hits that perfect chew.

  4. 4

    Sell Out Saturday

Straight to the market — then we head home and start all over again.

A Family Operation

Two Jerky Lovers Who Got Carried Away

Kick Ass Texas Beef Jerky is Brandon Gillespie and Christeen McMahon — a small family business out of Harker Heights, Texas. Christeen is a former U.S. Army staff sergeant; Brandon runs the smoke. It started as jerky for themselves and their friends. It did not stay that way.

“We started making it for ourselves and people started asking about it. After the first bag sold, it pretty much steamrolled from there.” — Brandon Gillespie
“We’re beef jerky lovers, and we’re active. Our friends started buying it from us and liking it… it just got bigger and bigger, and here we are now.” — Christeen McMahon

Good Questions

Beef Jerky FAQ

Does your beef jerky contain preservatives?

Nope — zero preservatives. Our jerky is preserved the way jerky was always meant to be: properly marinated, smoked and dried. The full ingredient list is beef, hot sauce, soy (soybeans), salt, wheat, blended spices and red chili pepper flakes. That’s it.

Does it contain allergens?

Yes — our jerky contains soy and wheat (both come from the marinade). If you have questions about allergens, get in touch before ordering.

How spicy is Spicy Boy?

Spicy Boy has a real kick from red chili pepper flakes, but it’s built for flavor first. As one customer put it: “a nice kick that’s not overpowering the flavor.” If you want zero heat, the People Pleaser is your bag — literally.

Do you ship beef jerky? Where to?

We ship anywhere in the USA — all 50 states. Shipping is a flat rate calculated at checkout, and orders over $150 automatically get 10% off. Order right from our products page.

How is your jerky made?

Each small batch takes a full week: we marinate the beef, smoke it low and slow, then dry it meticulously. We start the next batch as soon as we leave the farmers market each Saturday. No factory, no rush, no preservatives.

Where can I buy your jerky in person?

You’ll usually find us Saturdays at Barrow Brewing Co. in Salado, TX, from 9 AM to 9 PM — with free samples. We post each weekend’s location on our Facebook page.

Do you do large or wholesale orders?

We’d love to talk. Send us a message or call (610) 331-2771 and we’ll work something out — remember, orders over $150 already get 10% off automatically.
